It’s tomato season! My parents have a ton of tomato plans in their backyard so every time I visit them my mom hands me a huge bunch. They planted lots of old sorts. Do you see that funky green yellow marbled one? Best tomato I’ve ever had. Slightly sweet and freshly sour.I wish I had more of those. Nom nom nom. Oh and that Bread pictured? Baked by my parents neighbor! Seriously this is just perfect. I love homegrown fruits and vegetables. It just tastes better, don’t you agree? Well so given these two main ingredients I decided to make a Tomato Salad with Garlic Bread for dinner. Want the recipe? Here you go!
Wash the tomatoes and depending on their size cut them in half or quarters. Put them in a bowl and salt them. While this soaks some of the juices out of the tomatoes continue with the marinade. In a small bowl mix together oil, vinegar, salt, pepper and sugar. Drain the tomatoes from the juice. I learned this trick from an old Italian lady during a cooking class in Tuscany. This gives the tomatoes a nice extra flavor.
Mince the garlic and mix it with olive oil. Now spread it over the sliced bread. Roast the bread in the oven so that it slightly browns. You really have to watch it. It will only take a couple of minutes. Love garlic? Me too! If you want it extra garlicky roast another minced clove in some olive oil in a pan and add it to the marinated tomatoes. Serve immediately once the bread is done. Feel free to add some fresh basil. I didn’t have any on hand but this would definitely go great with this Tomato Salad.
